Building a Colour-Coded Set for Your Kitchen
For most commercial kitchens a full seven-colour set covers every food group: red (raw meat), blue (raw fish), yellow (raw poultry), green (fruit and veg), brown (cooked meat), white (bakery and dairy) and purple (allergen-free). Smaller operations may start with red, blue, green and white and expand as needed.
Choose standard or heavy-duty thickness based on throughput — heavy-duty boards suit high-volume kitchens and butcheries. Store boards upright on a stand so they dry fully between uses, and replace any board that becomes deeply scored, since grooves can harbour bacteria.
