Understanding Gastronorm sizing

Gastronorm (GN) is the international standard for food pans, so any GN insert fits any GN-compatible bain marie, chafing dish, prep fridge or combi oven. A GN 1/1 (full-size) pan measures 530 x 325mm; a GN 1/2 (half-size) pan measures 325 x 265mm – two halves sit side by side in one full-size well. Depth then determines capacity: shallower pans suit display and quick turnover, deeper pans suit soups, stews and bulk holding.
